Stave + Barrel™ is our single barrel, double oaked, high rye bourbon for the bourbon drinkers who enjoy the traditional flavours of bourbon but want something new in the mix. We have found that adding a bit more rye to the mash gives our bourbon a more pronounced variety of flavours. As with all bourbon, Stave + Barrel™ is put in a new American oak barrel to provide the zesty flavours associated with bourbon, and then we use used barrels to bring opposing flavour notes into the bourbon. By bottling time this is a bourbon that provides tastes of oak, vanilla, soft spices, dark chocolate, and a smooth caramel finish. And did we mention that it is barrel strength? We think the only person who should decide if they want anything added to their bourbon is the person drinking it.
