Jefferson’s Wood Experiment series, which sees their bourbon finished in a number of ways, including in casks with different barrel char profiles, wine casks, insert oak staves and more.

For over two and a half years, Jefferson’s Bourbon founder and master blender Trey Zoeller carried out 13 different experiments on fully matured bourbon by changing tthe conditions in which the bourbon was aged. Whether it was placing the already aged bourbon in new American oak casks with different char levels, changing the barrels to wine casks, or adding wood staves/cubes that have been treated, Zoeller did it. He chose 5 experiments that he felt brought unique characteristics to the bourbon and packaged them together in five 200 ml bottles.

Distillery Information

Founded in 1997, Jefferson’s is the brainchild of Trey Zoeller and his father Chet, a famed bourbon historian. They were continuing a family tradition that goes back to Trey’s 8th generation grandmother who was arrested in 1799 for the “production and sales of spirituous liquors.” To personify the brand, they chose Thomas Jefferson—known for his curiosity and experimental spirit. This is a mindset to which Trey has dedicated himself, pushing the boundaries of the definition of bourbon. Upholding tradition, yet always discovering new possibilities.
